Dinner at Old Holland. Cork extracted with Durand. Drank in Gabriel Standart. Appearance is clear, medium intensity, ruby colour with garnet rim. Legs. Sediments at bottom of bottle. Nose is clean, medium+ intensity, with aromas of tertiary earth, old leather, dark redcurrant blackcurrant, touch of green pyrazine, eucalyptus mint, ?cedar. Deep Ruby Med+ on the nose, blueberry, dark cherry, pencil shave, cedar, smoke, minty, liquorice, bay leaves, different kinds of spices. Developing. Dry, high acidity, high alcohol, high tannins, med + body, med+ intensity, plum, cherry, med+ finish. Beautiful on the nose but a bit too fruity on the palate. Surprisinhly, it’s still very fruity given it’s age.

Judgement of Sydney (Strand Cellars, Croydon) : Served blind. Leather, earth, volatile acidity, oxidised to almost the point of being out of condition, slight baked notes. On the palate the VA and the oxidised notes, soy, chalky tannins. Possibly flawed? Old Australian under poor cork?

Absolutely stunning and absolutely singing. Incredibly, this stood up to the 90 Margaux next to it, and indeed, was looking like the one with more time left in the tank. Not sure you will find a better example of cabernet from WA. Perfectly cellared since release, this was fresh as a daisy. Drink: now-2030+

Impromptu dinner at home : Level was well in to the neck still. Cork was removed in multiple dried pieces. Decanted and served. Only slight bricking. The aromas are well developed - earthy, cedar, tobacco, with some dark berry fruit. The palate is wonderfully elegant, with some spice and dark fruits harmoniously wrapped by the soft tannins.

Perfumed, spice, cedar and some briar on the nose. There is good intensity to the fruit but still a overall character of elegance with depth. Heading towards being ready but a little bit more time certainly won't hurt.

Terrific bottle. Cork was hardly stained and withdrawn in 1 piece. Nuanced aromas - from black fruits, through cedar and leather, to cigar and earth. Lovely palate with freshness and drive, to a fine, elegant, sustained finish. The best of my bottles so far!

Fine, aged CS. Still bright, but bricking in colour. All sorts of aromas and flavours appear. From earthy, mushroom tones to cassis, hints of tobacco, and even some dark fruits. The flavours changed with time, but over a 4 hour period, the wine never fell over. This was a most enjoyable bottle.

Nose of settled fruits, old wood and licorice. Good aromatic lift. Lots of cabernet fruits to taste, slightly herbaceous and then gets progressively liqueured. A line of astringency runs through but the fruit wins in the end.

Truffle Dinner (Sydney, Australia) : Blackcurrant, cedar, tobacco leaf, tea leaves and spice. Had me fooled for Bordeaux. The weight of the palate is an outstanding feature, it has intensity and depth of flavour without any feeling of it being too heavy or overbearing. Everything is well integrated and balanced. A great pleasure to drink now and for the next 5-7 years.
