On day one I found the reduction a little overt, even though the sheer combo on power/acidity was thrilling. By day 3 it had loosened up and was just magnificent.

Initially a bit cheesy on the nose, high acidity, some dried apricot, bitter note on the finish. With time this opened up and showed lemon confit and lost its bitter note. Nice, but didn't impress me that much.

Savagnin Jaune and Savagnin Vert aged 15 months in barrels of different sizes, bottled without any additives, 13.6% vol. The nose reflects the natural wine treatment and shows mainly white and yellow stone fruit with a suggestion of orange peel and notes from the yeasts. On the palate clean, slightly creamy, good freshness, depth and length. In the style of the house, perfectly made natural wine and in a nice spot now, may stay for several years at this level …

Drinking so well right now - good weight and well balanced. Nice minerality and long finish

This deeply peculiar smell that savagnin has is after 12 hours open for business and has manifested itself with that strong sesame, apple and acacia. The first sip is a battle between malo, oxidation and acidity. Pears are the main dominant fruit here. The heat of the vintage is shining through. Amazing. Give plenty of time to open. I'd say it's drinking really well now — and i'd drink within the next 6 years.

Majestic. Nice richness with the 14.4% abv and a lime confit acidity to balance. Lingers on the palate with a refreshing lime peel bitterness. From just over 1 hectare of vines. A hint of oxidation and reduction gives away its natural wine making approach but it’s clean enough for a me!!

Had at the Ledbury. Racing acidity that gives way to a bouquet of citrus as the wine warms, including Meyer lemon, yuzu, and white grapefruit. Like lemon sherbet, it is a perfect complement to a rich dish.

Dinner at Iki Ramen vol.II (Iki Ramen, Los Angeles CA) : And this is how we're finishing the night! I don't come across these all too often, so it's a fun treat to have something a bit out of my normal wheelhouse. There is a bit of reduction to the nose at first that gives way into captivating tones of orange peels, nectarines, some match stick, anise seed, licorice, spiced pears, red apples, dough, and a touch of rancio. The …

Needs an hour or 2 of air for the nose to open up and get going. On the low end of reduction for labet. Tons of acid and salinity, but also feels a touch hot on the palate. Not completely in balance at this point. Overall a nice bottle of savagnin but slightly below my expectations for labet savagnin.

As other users has pointed out, there's quite some reduction on opening, so my recommendation would be to open a few hours ahead and serve in larger glasses to let the air help it along. Lemon, cream, apples, and everything oxidizing slowly. It's just so nice —

Lots of white fruit, sufficiently ripe but zero tropical flavors, medium bodied with good acidity, very saline and fresh. Should come together and improve with age but drinkable now.

moins bon que les autres goutées auparavant. Très bien accordée avec du vinaigre balsamique par contre, sans blague!

A bit of reduction but not overwhelming. Deep and intense. A savagnin powerhouse. Very good, but probably better with another year or two to integrate.

Savagnin aged for 22 months in oak barrels and egg-shaped concrete tanks, produced without any additives, 14.4% vol. Restaurant Moment, Bern, on a cool summer evening. PnP and enjoyed it only slightly cooled (guess between 14 and 16°C). On the nose a bit generic, similar as many other natural wines with a funky note, quite yeasty and a suggestion of apples. On the palate it gets much more interesting with a mouth watering acidity, a bit lemony and you can …

Still quite closed, but opened with decanting. Very intense nose of nutty aromas, citrus rinds and typical Jura tension, high acidity, lasting very long

The wine was CLASSIC Labet Savagnin. Reductive, tart Meyer lemon, wild energy on the palate, electric acidity. All wrapped together in a sharp intense mouthfeel that's dripping with salinity on the back end. Delicious wine when on, too bad I stopped buying them as the oxidation rate was fairly high on the Savagnin with a few years of age.

This pours medium gold in the glass. This is complex, deep and rich. The nose is of ripe pear, oxidizing apple, mint, nutmeg. The palate is also fat and rich with old oak, butter, and cut acidic cut. Even just a touch of tannin on the finish (a little skin contact?).

A blend of Savagnin Jaune (75%) and Savagnin Vert (25%) from a vineyard planted in 1990 and 2003. Aged for 22 months in oak barrels and egg-shaped concrete tanks. Bottled on 21st of August, 2020. 14,4% alcohol, 7,2 g/l acidity, 0,52 g/l VA, pH 3,03 and 20 mg/l SO2. Medium-deep lemon-yellow color, slightly deeper than the Bornard Les Chassagnes 2016 that was tasted alongside. Lean and surprisingly green-toned nose with aromas of apple peel and herbal grassy character, some key …

Nose of golden apples, white tree flowers and light muscat, encouraging spring notes. Mouth quite reducted roots and beer with baked apples slightly oxydised. Most of tasters took it for a Chenin. A natural wine, still long and expressive but inaccurate and not precise as you coul expected from a savagnin. Let it sleep in the fridge and see tomorrow.

Much better after one days opening. Today open label. Reducing notes have settle down, the structure is more balanced, with still baked apples nice acidity and flowers as lily of the valley. It is a rich style of savagnin with organic a reduction notes.

Citrus, ripe apple and herbs on the nose. Palate with an intense acidity, as well as notes of salted caramel. This wine is quite tart and somewhat wild, interesting, but not exactly easy-going.

Yes, agree with Capt. cutlass and Acyso. There's a richness in texture and color but the herbal, saline razor sharpness cuts through it and creates a very savagnin (topped up) feeling of precision. Beautiful.

Wow! Like a cross between a top drawer Sauvignon Blanc and a rich but very focused Chardonnay. Has hay and aniseed on the nose with a sharp yet ample palate dominated by a myriad of lemon flavours ranging from acid to sorbet to confit. Long and flowing. I had to up my last score as this was in orbit with scallops, lemon zest and garlic accompanied by mash potatoes and asparagus from the oven Ottolenghi style. To parley a famous …

Quarantine; 3/12/2020-5/29/2020 (Chicago, IL) : Saline and nutty on the nose with a somewhat paradoxical note of browned fruit but still with tons of freshness. Bracingly fresh on the palate with really enjoyable acidity, a good squeeze of lemon, and extremely pronounced salinity and minerality. A rich body to round out everything, with a pleasant nutty bitterness on the finish.

¡¡¡DOMAINE LABET!!! (Chicago, IL) : This is certainly quite different than the chardonnays. There's a really intense salinity here. Clean and elegant, with that nutty note that even the non-oxidative savagnin wines have. This definitely shares familial characteristics with the chardonnays though -- that slightly creamy lemon flavour, the bright acids, and just a clean minerality that is very compelling.

Faint white flowers with a dash of natural wine funk. Smooth mouthfeel despite the linear, mineral drive which ends in citrus rind notes and a touch of bitterness. Long finish. Resolved, maybe too much so for long aging? Let this warm up a little to get the full expression. Made like a great Chardonnay..
