Short mineral/saline finish. A tad austere which didn't bother me and a little bit of a clipped finish. Still thoroughly enjoyable.

This is a 2018 base with a 2023 disgorgement. It pours a deep strawberry color. The nose is balanced and fragrant with tones of red berries, strawberries, raspberries, citrus notes, Meyer lemons, pears, quince, baking spices, toast, biscuits, and red flowers. The Medium bodied feel is vibrant and deft with integrated+mouthwarering, high acidity. This is lovely and refined. It shows off excellent balance across the nose and palate while the older disgorgement has let it settle in beautifully.

(just realized second review here. Without knowing, my score is the same) Decent Champagne, but just recent. Nose & palate of fresh pressed apple. Definitely some residual sugar resulting in a slightly sweeter product than expected. Not a great deal of depth or other favored flavor components.

Surprisingly chalky for BdN.

This is my preferred style. Citrus balanced with yeast and a touch of minerality. That mineral punch is what sets this apart from the Moets of the world. Those are tasty, but this is affirmatively good. That is the line

A private dinner (Restaurant Choux, Amsterdam, NL) : Organic and biodynamic viticulture. A blend of 85% Pinot Noir and 15% Chardonnay, base vintage 2017 (54%), 40% fermented and aged in wood, malo complete, bottled July 2018, disgorged July 2023 without dosage. Firm and direct, lots of minerally energy but rounded off by the long lees and post-disgorgement ageing, expresses its Côte des Bar terroir very well.

Holiday Bonfire (Woodstock, GA) : Another great showing. Classic, rich and nicely balanced, yellow fruit, gentle yeast, mineral lift, so solid and great QPR; sabered one and drank 3 bottles total.

Acide sans bon sens, decapant

Light golden in color, fine bubbles, and light mousse. Nose of lemon pastry, limestone, brioche, yellow apple and pear. High acid, dry, medium mousse and effervescence, medium mouthfeel, medium alcohol. Flavors of yellow apple, pear Danish pastry, limestone, light baking spice and warmth.

A gift, a half bottle, part of a Betty’s Tea Shop, Harrogate, Yorkshire, Christmas hamper. A dry style though before that comes plenty of soft ripe white fruit and lovely oak; very classy for a NV from a house I hadn’t heard of. Citrus, apple, white/yellow stone fruit. Not especially complex, but plenty of flavour and charm here. I’d love to taste a cellared bottle. Off to find a proper 750ml bottle.

Dinner with Steve & Lucie (At their apartment) : Disgorged in August 2021. Made from 100% Pinot Noir. A bright pink rosé color. Red fruits and berries on the nose. Light red cherry, strawberry and some green apple on the medium bodied palate. Moderate mousse and acidity. Went well with an assortment of hors d'oeuvres.

Served in flute glass. Biodynamic champagne from another small Maison based on Pinot noir grapes. Fine bubbles more elegant than crunchy. Energetic, fully acidic and yet juicy and long. Surprising for its range. Servida en copas flauta. Champagne biodinámico de otra pequeña Maison basado en la uva Pinot noir. Finas burbujas más elegantes que crujientes. Enérgico, plenamente ácido y aún así jugoso y largo. Sorprendente para su rango.

Wonderful effervescent champagne with hints of Meyer lemon and pear. Very crisp, and great lingering taste.

Really enjoyed this though it didn’t jump out of the glass for me. Bready yeast and apple on the nose. On the palate this presents round but not flabby, definitely not linear in my experience or definition. Some apple, brioche, very little citrus. A mellow, lingering finish. Medium body and medium to light acidity. (Drank from 375)

Fleury - one of my favourite producers, beautiful facility, always hospitable during visits. BN The wine looks light gold colored. The legs are fast. There is no sediment in the bottle. It smells like cherry, pear and baker's yeast. It tastes like apple and lemon. The body is medium. The wine has juicy texture. The wine finishes medium. The wine has medium acidity.

85 % 피노누아 15% 샤도네이. 2014 빈티지 75%. 38%의 리저브 와인. 2015년 병입, 2020년 7월 데꼬르주멍. 데꼬르주멍 후 거의 4년이 흘렀지만 강렬하고 풍성한 과실향이 상당히 인상적. (피터 림은 플뢰리 샴페인의 이런 경향을 바이오다이네믹의 특성으로 설명한다) 매우 신선하고 날이 서 있는 산도는 블랙체리와 살구의 풍성한 과실미와 조화를 이룬다. 여운이 길다고는 할 수 없지만 상당히 복합적인 매력과 개성을 지닌 샴페인. 상당히 맛있다.

Almost creamy, with almond and Brioche notes. Some lemon as well. Bright straw color. My wife loves it.

MG, Degorge 2013. Even for a MG this is about time to drink this wine. Ok but weak mousse. Little bit of nice fruit accompanied with acidity. Almost no aftertaste.

Good for a glass - a bit too thin for me but a nice apple pie, apple juice, simple and fun. Not a buy but wouldn’t push away one glass.

Basically my go to champagne for aperitif. When properly cooled, it's a refreshing delight of baked apple washed with a cold, mineral mountain stream. Precise, linear, soulful. From a hardcore biodynamic producer.

Long-overdue dinner with Nel & Illy (Theirs) : Decanted. Rich rose-gold colour, enticing nose, really compelling on the palate. G loved. Worth seeking out.

Beeswax, apple, cinnamon, brioche. Quite nice. Reminds me a lot of Pascal Mazet (RM) champagnes— especially his solera based “unique” champagne. It’s the liquid version of apple preserves on a brioche dusted with cinnamon. A second bottle a week later was quite different and was a bit more chalky and austere. Much more to my liking (I’m more of a BdB guy).

Nose is yeasty with citrus and red apple. Palate is red apple, lemon, a little stone fruit, and minerslity. The red apple is pronounced. Nice long finish.

Toasted brioche and nutty notes on the nose. Almonds, green apple, lemon zest, and pear, with a long finish that brings up subtle hints of honey. Crisp acidity leading to a refreshing and complex wine.

Colore piuttosto chiaro con riflessi più ramati e bollicine molto fini. Naso fine ed elegante. Pompelmo, mela, pera, lampone e echi di frutti rossi. Non c'è una particolare evidenza di lieviti o tostato, ma c'è equilibrio eleganza e tensione, anche al palato. Bene anche il finale, lungo e gradevole.
