Encore une fois je m’attendais à plus. Le nez est intéressant, citronné et un poil salin. Mais en bouche, très ordinaire, longueur tout juste moyenne. RQP décevant.

It wasn’t quite as fresh as a 2013 we’d had a few nights before, showing a little nuttiness. It was loaded with lemon and grapefruit and had saline minerals a plenty. There were whiffs of blossom and mint too.

I’ve opened a few of these, with mixed results — this bottle was killer though! Piercing acid, bright citrus fruit that’s super fresh and dense. In a really great spot, maturity-wise, lovely richness and weight, with intense minerality and cut.

Dauvissat’s La Forest 2017 is a spectacular wine that is drinking flawlessly at the moment. Deep, concentrated, and very complex already, it exudes beautiful aromas of oyster shell, lemon oil, kefir leaves, smoke, butter, white flowers, and pear. On the palate the wine is medium to full bodied, showing great energy and impressive depth, with a long mineral-driven finish.

I had this wine a month ago (forgot to post a note) but this bottle was a bit different, primarily in terms of how slowly it opened in comparison but was otherwise the same wine. Nice balance of acidity, touch of citrus peel but with some lemon sweetness with some iodine elements and seashell minerality. This bottle was tightly wound upon opening and had a short and abrupt finish. The last glass was the best when it started to show …

A good bottle and consistent with prior bottles from the case. Lovely balance from the start. Bags of complexity. There is a lovely sweetness of fruit that makes the palate sing. Saline. Iodine. Classic oyster shell. Impressive energy. Bags of flavour. Focused, but not overly taut. Acidity backbone gives structure and complexity and there is certainly a nice long finish here. The wine added more complexity with time in the glass. This is a total sweet spot wine for me …

I need to learn to give these a bit more time, and some higher temperature, because that's what really made this shine. Lovely saline note, but also some stone fruit, light touch of oak, good acidity, apple, quite rich actually. Awesomewine.

had this six weeks ago but from memory it was in a great spot; wet stones, limestone, flinty, salinity, lemon curd, great acidity

gorgeous nose, lactic, nutty... cheesy in a very beautiful way, scallops, beeswax, lemon candy, pear.... full and savory, beautiful cut, texture galore, oily and grippy at once, still a bit young, full of pleasure

Sadly this was in no way, shape or form what it should have been. Not corked or oxidized but just very flat and uninspiring. Hopefully my two remaining bottles will show better.

Drank as part of a birthday dinner for a good friend. Lemon preserves and savory minerality. This took some time to open up, but when it did, it was beautiful. Bright, fresh, and complex. Layers of citrus, herbs, and minerality.

Wines with Dinner (and après dîner) in Burgundy; 10/6/2024-10/13/2024 (Cote d'Or) : Faintly floral start with so much lemon, lemon zest, and lemon curd aromas and flavors. Bright to start, this stayed bright but managed to also show more lushness an hour later. A great Forest vintage with upside from here.

See immediately proceeding prior to tasting notes, completely agree. I pulled the cork on this at 4:30 PM and brought to a wine dinner at 6:30 PM. Served about 7:30 PM or so. Outstanding. So well balanced, classic Chablis. Much better experience than two years ago. Absolutely needs a decant or a long slow ox.

A private dinner with friends (Restaurant Kaagman & Kortekaas, Amsterdam, NL) : Richly textured but elegant, steely and stylish, perfectly classical, harmonious, intense but gentle, subtle warmth from the wood, long and flowing finish. Needs more time.

Textbook 1er cry Chablis from a great vintage. Chiselled, crunchy, oyster shell with lovely waxy orchard and stone. Good depth, became more alive after an hour.
