A pet-nat style wine made of young-vine Chenin-Blanc. Pure golden appearance, small but ephemeral bubbles. Straw, apples, pears, quince, beeswax on the nose, there is a great Chenin underneath the bubbles. Fresh, med-high acid, apples, cake bread finish. Tartrate crystals in the final glass tell of low-intervention philosophy. Highly recommended.
