At twenty-one years, this 1999 Ristow Cabernet Sauvignon, Quinta de Pedras Vineyard was outstanding and showed no signed of diminution from aging whatsoever. There is much life left in this release, I could imagine it lasting another ten years. The label, foil and cork were perfect, the neck caked with a layer of sediment. Dark inky blackish purple colored, full bodied, intense bouquet of ripe black fruits exploded from the bottle upon opening, complex blackberry, plum, and black currant fruits …

Fairly flat dusty boisenberry jam smell at first opening, suggesting strong tart fruit aged in place. Faint leather in the sun with the first sip. Intense old fruit jamminess midmouth. Smooth finish. Satisfying tartness.

Coravin day 0. Some bretty funk on the nose, but quite subtle. Big, dark fruit and expansive, complex presentation on the palate. The funk comes back in the finish though, which is pretty disconcerting. Overall this is a pleasant, well constructed wine.

We had the rest of the Coravin-tasted Magnum last winter. It was also very good. The end of an era.

Food and Wine in Maplewood (Maplewood, NJ) : Well, this magnum finally turned up, after being "lost" in our cellar for almost a decade! -- and just in time for a wine tasting meal with prime rib my friend was organizing. So I figured it was meant to be. For a 1999 wine, I was surprised how tannic and youthful the wine drank. There were noticeable tannins in the finish, plus red fruit flavors cherry, cassis and currants, with a …

Nice garnet color, chunky sediment and decanted. Hot nose. Folgers coffee, pencil shavings, RC cola, dirty dark cherry, marjoram. Overall, not so multidimensional...time to drink and eat with some mushrooms and cheese.

Deep dark reddish-purple; almost opaque in color. Full, forward & attractive nose of mature & well developed, complex dark fruit aromas of cherries, cassis/currants & plums with earthiness, dusty & cedar overtones, dried herbs, spices, anise & mint notes, minerals, dark cocoa & a hint of vanilla in the background. Full bodied with a very good concentration of smooth textured & balanced, mature & developed, complex dark fruit flavors of cherries, blackberries & plums, herbs, mint, spices, cocoa, minerals, a …

No score as we all felt that this bottle had past its prime. Very little fruit left on the nose, kind of a dull, flat flavor. Not a good wine anymore. Oh well.

What a special wine, so many bright flavors still in this one I think I could have waited at least 5 more years and it would still be singing. Very much old school in style and from what I'm told it was a good example of the '99 vintage altogether.

I wasn't overly thrilled with this wine. I bought it at auction for a steal of a price and figured I'd give it a whirl. Modest nose of blackberrry, cherry, and leather. Medium body and on the dry side in the mouth. Tannins are non-existent. The wine doesn't seem to show it's age in the glass as there is very little copper around the rim but it's definitely drink up time if you have some.

Starting to get a little heavy on the wood notes, fruit is fading a bit, but still drinking well. Has a fairly long finish with flavors of red fruit (cherry) and some dark berry flavors. decanted for about an hour.

I have opened 3 in the last couple of months. They are starting to show signs of their age. Rusty rim color. Sour finish. Tons of sediment. This wine has been kept in my cellar in the low 60's. Maybe colder cellaring would have helped.

Inky dark, tobacco, leather, black licorice on nowe with a touch of eucalyptus as well. Brighter on palate with clear tannins. Lighter fruit than i expected with a moderate finish. Still has some time to develop i think in terms of structure, but concerned that the fruit will fade as the rest of the wine comes into better balance. No confusing this with anything other than a California Cab....much better balance and sweeter fruit after 30 minutes in the glass. …

These bottles are spewing out tons of sediment. A gnarly cork scab that you could peel off. There is still not even a hint of rusty color on the rim. Very smooth. We had a couple of nebies at the table that really enjoyed it. I have 5 more and I'm gonna let them sit even longer.

Cherry, dried cherry and blackberry. A savory creamy flavor in the finish. I would not say overly tannic but still a little astringent. Really nice acidity. Not as earthy as most Bordeaux I have had but not huge cabernet fruit either. Reminds me a little of the Amici I had recently.

Good on day one with some time, but great on day two and day three... this wine is still drinking really well. If you got it, drink it now.

Inky garnet. Dusty earth and cassis but a bit thin on the palate. Tannins resolved. Decent mature Cabernet that improved over several hours. Still all there for the most part but not for long.

Drinking well now, but probably for not much longer. Very smooth and a refined taste, but definitely taking on more of an old world role now and not your typical fruit-forward Napa cab.

CT shows the drinking window on this wine to go well into the future. I would disagree with that point of view. Don't get me wrong, the wine was nice, but I didn't get the sense that this wine had many years ahead of it. It took 20-30 mins to open up, but drank very well with a sausage and cheese plate.

The best, and final, bottle of the Ristow library purchases - much to my chagrin. Enjoyed this time with a decent Filet Mignon, perfectly balanced at this stage, with fruit still vibrant, tannins smooth and silky, big mouthfeel, and 20-30 second finish.

Pop & pour. Dense and dark in color with strong aromas of red berries, musty spice, green pepper, and a touch of earth. Full nectar with soft tannins yet possessing a cranberry acidity for balance. Good flavor extraction spotlighting black cherry with red currant, cinnimon, earthy soil and minerals as collateral. The finish lingers. This is ready to drink needing no time for breathing.

Delicious initially then faded...had been breathing for 2 hours before first taste...should have tasted earlier!
