No carbonation and quite corked. Under the cardboard there’s a distinct note of deeply roasted hazelnut.

A blend of Xarel-lo (75%) and Macabeo (25%) from a biodynamically cultivated, 5-hectare vineyard, La Plana. The wine is aged for a minimum 72 months on the lees, after which the wine is both riddled and disgorged manually. The wine is Brut Nature, thus no dosage. 12% alcohol. Tasted blind. Pale, quite neutral yellow-green color. Contrasting the light color, the nose feels complex and quite dark-toned with layered aromas of autolytic mocha character, and chocolate roll stick wafer, some vanilla …

Nose of apple and bread. Good acidity on the palate, with notes of yeast, pear, and Gala apple. Lots of very fine bubbles with a great mouthfeel. A lovely cava. Fantastic value.

Rating 87+/100 (3,75) Persistent mousse. Nose of bruised apples, peach and some other stone fruits. Not enough acidity to reach a perfect balance. One of the most famous Cava. Grower crafted Spanish bubbly. Family owned. Single vineyard. Biodynamic cultivation. 7 years aged on lees. Brut Nature with zero dosage. Blend 75/25: Xarel.lo/Macabeu. It has everything that you can think of to please wine enthusiasts, but imho it is still light years away from Champagne. Good on its own, but …

We had this on 4/6/18. It had a soft, subtle bouquet of yeast, floral, citrus, toasted nuts, dried herb and mineral aromas. The palate was rich, elegant and dry with flavors of pear, lemon, herbs and minerals.

Excelente cava.

I can't say I have drunk a lot of Cava, but this is certainly the best I can remember having. Absolutely spot-on and could easily be mistaken for a well-made grower Champagne. Lovely bead, nice citrus and apricot, a bit yeasty, and a fairly long finish. This is wonderful stuff that has aged flawlessly.

Pretty disappointing, to the point that I almost question the storage and shipping somewhere along the chain. There were some aged and oxidative notes, but it was thin through the mid-palate and despite being a brut zero, it had a weird powdered sugar-like quality that was as unpleasant as it sounds. The acidity was a bit overbearing and the finish was a bit clipped. The Imperial Gran Reserva is a ton better at a little over half the price.

7 years of aging, single vineyard, non dosage, aged under corked, riddle by hand and disgorged by hand. And that is powerful and macho and dry with drive. Will go longer. Yet who, besides a high end NY Spanish restaurant with a tweed jacketed under weight sommelier needs a $45 cava?

Golden straw color. Wonderful bouquet of baked apple and lime/citrus. This just got better and better in the glass! The palate was creamy with some citrus, flowers and butter cream. It was luxurious and delicious.

I've been trying a lot of cava since I'm getting tired of paying upwards of $60 for champagne. This one isn't bad at all, just missed the mark for me. Golden yellow with hay and stone fruit notes. It seemed to have a hint of sweetness to it, not terribly noticeable but not as dry as I'm looking for. Unique waxy texture with lively effervescence. Bit of a short finish. Not bad for $30ish bucks.

Misc Tasting : Tons of rye bread on the nose with hints of butter and bread. Sweet red/brown apples on the palate with a impressive density. The rye is also very much present but also some mushrooms. Plenty of edges and overall a very interesting bottle. Perhaps a bit short of the aftertaste.

Subtle sparkling, citrus, nice acidity which is great after 11 years in a bottle and wood tones (60 months sur lattes). Tasted this brut nature next to an extra brut champagne and it stood its ground.

Bandol and other rosés with Munskänkarna (Brussels) : Clear, light yellow colour. In the nose yellow fruit, citrus including zest, some biscuity aromas and some development. On the palate quite dry, rather fruity, minerally, citrus, yellow fruit, high acidity, almond, and some bitterness in the finish. Good aromas, elegant, definitely an ambitious sparkler, but the final bitterness reduces the rating somewhat, 87-88 p. In the nose and in the attack it was rather similar to a serious Champagne Blanc de …

Hmmm, $60 Cava? Is the cork made of solid gold? The bottle studded with diamonds? I have no doubt that this winery is capable of making a wine that drinks like a good Champagne, but if you're going to charge this much $$ then you'd better deliver. This bottle did not. There's nothing wrong with it really, and in fact those who were drinking it with me really liked it, but to me it was a dud. Where's the fruit? …
