Poderi Colla Wine Dinner (Giando, 5 Star Street, Wan Chai, Hong Kong) : The family has been making Metodo Tradizionale Classico since 1909. Served in large wine glass. Nice lively but fast-dissipating mousse. Semi-still wine in terms of bubbles. Distinctly rosewater/gold colour because they keep the skins in the ferment for an extended time. Subtle rose-water perfumed nose with fresh ozone. Very refreshing palate which is more frizzante than the appearance would suggest. Rose hips with the seeds. Nice structure …
