Glass: Zalto Universal Popped and poured. Beautiful Spätlese from a warm vintage. It is for sure creamy and has lots of ripe fruit, but also a wonderful tension, balance and elegance. Uncomplicated and juiciness in the best sense! Long and lingering, with a very fruity end. Drink now or over the next decade. 91-92

Too much acid, not enough fruit.... ahh 2011 it is. Postscript - After almost pouring the wine out as unenjoyable, I corked it a put it into the refrigerator. Two days later it was almost the wine we would have expected. It did not really appear to be in a shutdown phase before, but now it tasted like a WS spatlese. Most strange.

This was under screw cap, still quite primary with a nice mix of tropical, orchard and citrus fruits, similar palate with a serious acidic backbone and a long salivating finish

From magnum, this was enjoyable sipping in its way, but the limitations of the ripe, low acid vintage prevent it from reaching any level of interesting. No fault of the winemaker, 2011 is just the least interesting vintage of the last 20+ years. I suspect wines like these will age a very long time, but always be serviceable at best.

"There's a lot of fish at Montrose Harbor" (Chicago, IL) : Quite Schaefer in its opulence, and that is of course amped up a notch thanks to the vintage. This has the minerality of Domprobst, but to my palate, it's missing some of the acidic cut to brighten it up and balance out the sweetness (which is plentiful). A bit creamy on the palate as well, but certainly very delicious all the same.

This has really improved with age and is unbelievably graceful and light despite carrying a good bit of sweetness.

Riesling bash at CHIKO (Chevy Chase, Maryland) : This had a vibe full of cinnamon baked apples, honeyed biscuits, almond cake, some spiced apple cider. Fun and tasty but lacked verve and seemed past prime.

Nervy for a 2011, racy acids with bright peach and lime fruit. Excellent length, this can age a long time but pretty delicious now.A-

Pale yellow robe, showing very youthful and primary. Nervy white flowers and slate lead on the nose. Lithe on the palate. Seems to be a true kabinett level wine. Punchy acidity and a sapid stony core. Great stuff.

Two months after the prior: happily, essentially the same. Yes, it’s a touch sweeter than we might prefer. But there is lovely tension, and it’s beautifully balanced. Highly enjoyable over four nights.

Medium golden. Sweet yellow fruit, balanced by adequate acidity. Nice tension. A touch of pleasant petrol and stone fruit pit. Very enjoyable spread out over five nights, gassed in between.

A nicely aged Spätlese. Young and youthful but not too young. I saw this more as an apricot/ honey profile on the palate and nose, but with light, impeccable balance. So tasty, not overly sweet. Perhaps a bit of botrytis? I a saw a bit of tartness that made me think of that.

Slightly sweeter than I would have expected for a kabinett. A little petrol on the nose. Slightly reductive with flavors of sweet Apple, honey, pear. Worked well with Thai food

Oily petrol nose with white peach and honeysuckle. Palate has ripe red apple and some tropical fruits. Straightforwardly delicious and it even that sweet.

So, 2011 is generally a lower-acid vintage, but there is nothing soft about this wine. Really dynamic on the attack, sweet but not too sweet, this wine is pitch-perfect all the way through, and long. Still very primary, but everything is there to suggest a slow, graceful evolution. Currently drinking much better than the 2012s. Wish I had more.

Bright and rich straw with a slight green hue. Nose of petrol, ripe peaches, Macintosh apples, and hint of talc. Tastes of peaches, apples, cider, and hints of limestone and cherries. Lovely acid and fruit. Still extremely young and needing time. Drink in 5-10 years.

This wine is still in the zone. It has perhaps shed some primary fruit since my last bottle and is showing more racy acid and mineral. Seriously delicious on a hot day.

Nose of honey, some botrytis and mineral notes. The palate is smooth, almost buttery... Like apples roasted in butter. Also very mineral, and with some nice acidity - almost like fresh and slightly tannic apples. Very balanced sweetness. Just wonderful!

Riesling Around the World-WWS (White Plains, NY) : Drank at WWS riesling tasting. Aromas of honeysuckle and petrol. Nice freshness, fairly crisp acidity, medium bodied with peach and apricot flavors. Somewhat on the roundish side, also fairly sweet. Pleasant spatlese all around.

Another good bottle. Under screwcap, this came out a bit reductive and one-dimensional when popped and poured, but a day or two in the bottle and it really opened up. It had a lovely nose, almost more Spatlese than Kabinett in its honey and stone fruit aromas laced with lime zest and stony mineral scents. On the palate, however, this was as classic a Kabinett as I have had in years given the warm, heavy vintages that dominated the late …

1982, '89 and '90 Left-Bank Bordeaux Dinner (Imperial Treasure Shanghai, Ngee Ann City, Singapore) : Wow - what a change a year or two makes. This is really coming into its own now and it absolutely lovely to drink on the night. It had a light, dancing nose that is so Mosel, with lithe scents of grapefruit, sweet apples and white peach laced with touches of mineral, lemon zest and white flowers. All very subtle, but really pretty. On the …

Lovely bottle of Spatlese, though seemingly a bit more advanced than I expected, as the aromatics had a good amount of funk and rot. Drinks beautifully now though. A good case for drinking your 2011's earlier than normal.

Good, but still very very youthful. Bottled under screwcap, it was just a tad reductive at first, taking a little bit of time to open up into lithe little notes of white peach, flowers and stony mineral, all still a little tight and subtle. The palate had the same nice proportions I liked in the last bottle, but it was perhaps even less giving, marked as it was with striking acidity and citrusy fruit racing through primary notes of white …

A nice young kabinett. The flint and floral notes came through for me a bit more this time. I'd love a touch more of an edge on these, but they're still very enjoyable. And looking back, I can see I've come a long way down the German wine path since I last wrote a note on this wine. Good stuff.

Maybe we don't have a taste for the Germans. Faint nose, one-dimensional palate, not an amazing finish. Nothing interesting after an initial sip so we decanted it for the rest of the hour/hour and a half that it took us to drink the bottle. Nothing really changed/evolved as it was in the decanter or swirled to death in a glass. I'm sure it's young, but I don't know enough to see if it might develop. Maybe these put on weight …

From magnum, and while it's absurdly young and primary now, it's a lot of fun to drink now with very fresh, vibrant Mosel fruit tinged with slate and florality, all coming together in a package with the finesse and elegance typical of Schaefer. Fantastic.
