Opened 6 hours in advance. The primary fruit starts to fade away now, there is still gooseberry and a green note but less intense now and the mature notes are not yet there. Seems to be in a difficult phase, but there is enough structure that keeps me hoping for a nice mature phase in a couple of years.

This was a good version of the wine. Mid gold, not too advanced. Nose has fruit and nuts in that order. No reduction or sherry notes. In the mouth, sweet green fruit, lemon and a touch of lanolin. But clean with fresh acidity and an evolving finish. I’ve had others from the same case which have been hollow, over-acidic or too far advanced. But this one is balanced and feels in the right space between primary and tertiary profile.

Comprised of 75% Sauvignon Blanc and 25% Sémillon, it offers an aromatic profile of green apples, white peaches, honeydew, lemon verbena, jasmine and wet stones. Subtle... very, very subtle. It seemed weak on the nose and bland on the palate (moderately lemony) but the finish held a nice balance of acidity and a light mineral note. I wouldn't pair this with any dish of significant flavors because it would easily overpower this delicate white wine. Dover sole & cream sauce is probably preferred.

Very smooth, medium body, a little dry, slight nutty/buttery flavor but not like a California chardonnay, long finish. Overall, well balanced, and easy to drink. It smelled sweeter than it tasted.
