Cellar Visit - Simonsig (Simonsig) : Some maturity here with plenty of yeasty bread, brioche, and crushed pecans and almonds with a lick of farm butter and some slices of golden apples. Complex, this shows clear lees ageing, and a squeeze of lemon keeps it on this side of fresh, and the mousse is pretty persistent. A light to mid-bodied fizz with plenty of that nuttiness running through the wine, helped by a vibrant acidity. Dry the length is moderate. …
