Henri Boillot Chambertin

This was a pop and pour. And with hindsight, didn’t do justice to what is an excellent wine. Serious amounts of spice and oak on the nose, likely from 100% new oak, and with a lot of size and structure. There’s fruit present but a bit masked for now. There is no doubt this is very serious wine of high quality, but either needs lots of air, or more cellar time. I cannot wait to follow this over time.

Pronounced nose with notes of ripe red fruits, red strawberry, slight green bell pepper.

double decanted 12 hours before serving. Served Blind. Really pure red fruit on the palate, cooling acidity but really dense concentration of bright fruit. Taste a touch of oak on the back end, but the length is pretty fantastic and the finish is long and filled with sweet fruit. The nose is as pure as the palate. Group enjoyed this very much. Just a wonderful youthful expression of grand cru burgundy.
