Time has tempered the acidity level & showing some subtle fruit jam notes amongst the funky oak base - Fantastic currently

Kristin and Colin's 30th (Chicago, IL) : I wrote the date June 18, 2014 in my notes; I think that was the bottling date. I had really high expectations for this, but honestly, it was far past the funk threshold for me. Iodine, barnyard, and other scents I couldn't quite decipher. On the palate, more of the same. I think I prefer my fruit lambics young.

Fresh crushed raspberry bouquet. The flavor profile is all raspberries and funk. There's a stem-i-ness component...almost like you can taste the seeds too. It's that kind of fruit expression. Raw, real...beautiful. Tannic. Long finish that lasts for 60 seconds. A perfect fruit beer. Drink now or Hold, if you must, for the near term.
