When first opened was very cold, came across extremely vegetal and grassy, almost bitter. After about 30 minutes, warmed up a bit and opened nicely. Very light straw color, slight green hue. Continued to have a vegetal undertone, but also a citrus/grapefruit flavor, with possibly a little gooseberry in there. Very bright and acidic. I had it with a salad, which enhanced the vegetal nature of the wine. Probably would have paired well with a cheese - like a Chevre. …
