Noguchi Naohiko Sake Institute Omachi

This was slightly amber-yellow; nose was strong and complex with very cool umami notes (sauteed shrooms, smash burger), apple, lychee, nectarine, cream cheese; soy? On the palate, powerful, rich (although not as full bodied as the Dassai), lots going on, with a beautiful umami balanced with other flavors (see above). 18% genshu, this packs a punch and will dominate most other sakes it runs up against.
