dégorgée octobre 2006, bouteille 6,254/9,393 - nose was very savory with lots of salty minerals. Very nutty, with a good level of acidity on the palate that was not too lean or sharp. It actually started out more rounded on the attack but got leaner towards the finish. Nice and complex.

Beat out the Selosse at the table by being more deeply sherried, offering nougat, spiced & buttered baked apples, croquembouche, caramel in spades, honeycomb, pear, and yeast. Seductive.

Definitely a shorter finish, and milder on the palate than expected. Still a very nice wine, but pales in comparison to the Selosse. About 90 minutes in the acidity on the palate was getting higher. Still very fresh and lively.

First off: what a pretentious name. Certainly very complex and worked. Smoke, brioche, thick expanding yeast, excellent mousse at beginning, but quickly diminished. Not alot of powerful fruit, but a kind or cognacy, spirity, smoky complexity. Somewhat demonic--the Champagne of Hades. Too expensive in some regards, and not really suitable for the oysters I had with it, but would be excellent with other dishes with more carbohydrates in them, or just by itself with some simple flatbread.

30th Birthday Dinner Redux (Le Gourmand: Seattle, WA) : Medium yellow in color. The nose is yeasty and toasty with other hints of apple and citrus. Very complex. Nicely effervescent on the palate with a smooth steady stream of bubbles rising to the top. Flavors of toast and cream on the palate. Rich and full bodied. Opened up very nicely as the Champagne warmed up in the glass. Don't serve it too cold. A spectacular Champagne.
