That said, the kombucha recedes with a little air, and you start to get hints of great vegetal Alsatian Pinot Gris forming -- I had memories (take this for what it's worth) of the magnum of Binner Hinterberg '12 that we popped at my wedding last year: zucchini, tobacco, dirt, etc. If they still have it the next time I pop in, I'm buying another bottle to hold on to.
