Savatiano and Aidani, semi raisined grapes. Very light and fleet of foot on both nose and palate. Clean ripe fruit and citrus, quite mineral as well. Sweet but not very. Could be bulldozed if drank alongside big flavours. This went pretty well with basque cheesecake and fresh berries though. Perfect for in the summer sunshine but I couldn’t really imagine having it in another context - does not have the oomph required.

Diamond Importers Greece Trip May 2025; 5/2/2025-5/11/2025 (Greece) : Sunday Dessert wine. 2024, but it’s listed as NV, as it’s not a PGI. 85% Savatiano, 15% Aidani. Feels Auslese-esque, and no more than that. 1wk drying in the shade, 75g/l RS, fermented in Amphora w/ cooling jacket. Bosc pear and nice and refreshing for a sticky. Marsha*
