This really needs to open. The first night, it was mean. tight (even by Txakolina standards) astringent, vaguely metallic? Honestly, wrote it off and left it in fridge over weekend. Checked in Monday night and a completely different animal: floral, ripe stone fruit, textured, supporting acid, but not bitter. Became Very good stuff.
