With a bit of age like our bottle the lack f freshness just makes the wine flat and fruit juicy and its a shame. A skin-contact Santorini Assyrtiko macerated with the skins for 21 days, hence the name. Fermented spontaneously, vinified without sulfites, aged for 10 months on the lees, bottled with a small dose (40 mg/l) of sulfites and without fining or filtering. 13,5% alcohol. Slightly hazy pale coppery color. Venue: Oinocoro (Naxos); General Notes: Artemis was, among other things, goddess of wild animals. Apt description for this bucking colt of a wine. This Assyrtiko spent 21 days on the skins; wild botanicals (juniper? Is that the skins?), ample in the mouth with crisp tannins, mega acid, and omnipresent mineral - a bit like licking slate - loads of grip.
