Billecart changed name of this from Brut Reserve (parcel bought 2023) to Le Reserve (parcel bought 2025). It's really an extra brut at 3g dosage. Everything you'd expect - from the bicuity nose, through to that apple and pear primary notes on the palate. There's a really cool site where you can put in your bottle number myorigin.billecart.fr and the tell you the cepage, % older wines with tasting notes - very informative. They could market this more.

Degorgement Date: Second half of 2022 Aromas of grapefruit, orange, and biscuit. The presence of red fruit notes is particularly impressive. It shows excellent acidity and a lingering finish, making it an outstanding choice for an entry-level cuvée. However, it leans somewhat bold, lacking the delicate complexity found in higher-tier cuvées.

Our James Bond Sunday bubble. Salmon pink in color. Lots of red fruit on the nose. Strawberries and raspberries. A little dusty. Nice mousse. Tastes like the nose. Not bone dry. A little rounder as with most Ros� in my experience. I was hoping for more. Medium finish. Nice bubble, but maybe a little pricey for what one gets.. Britt says just OK..

Open that bottle - Jason chooses 2016 Bond Vecina (Dan's condo in the Carlyle) : This is my first time with the Billecart-Salmon Le Rose since its name change from "Brut Rose". A bottle I bought about three years ago. Medium salmon colour. Red berries, apple, smoke, brioche, and chalky minerality, with fresh acidity and very good length. Fruity yet chalky and dry. The fine mousse seemed a tad aggressive at first but tamed as the wine breathed. This rosé also paired very well with burgers and fries. The Billecart-Salmon Brut Rosé is one of my favourite NV rosés, in particular with two to four years of age.

Pretty floral nose, acacia honey, patisserie, custard creams. Subtle strawberry notes. Very soft mousse. Youthful and fresh, with fine persistence. Elegant rather than powerful. Not sure how this is going to develop but lovely at present.

Fourth bottle of twelve, as usual very well behaved and likeable. Just a supremely easy Champagne, nothing overtly special, just a winner in all departments which makes it an easy choice. Celebrating a child's successful Uni application mid-week, it disappeared whilst cooking. Notes as per last time (December 25). Elegant, smooth, lithe and easy to like. Lovely stuff.

My go-to non-vintage rose. Drank a few bottles last nite with cheese and then appetizers. Pale pink color. Generous nose of strawberries, flowers and some bread. floral notes. Tart strawberry fruit, some citrus notes, chalky and creamy. Lovely long finish, left me wanting more...As always, just a delicious, excellent bottle of bubbly, and my fave non-vintage rose that's out there!

Heavier, rather than bright, lees notes dominated by bread dough. High acid but not searingly so. Dry but the dosage is apparent with the sweet sensation on the palate. Medium+ body. Bought this in Dec. 2017, and its been sitting in the cellar. Popped and poured Dec. 31, 2025. Good mousse, but doesn't last long. Very nice, smooth, some oxidative notes but nothing crazy. Biscuity/yeasty aromas. Flavours of strawberries, lemon and some orange zest. Very smooth, longish finish. Very enjoyable.

Disgorged 4/2019. Light gold color. Bubbles are still bubbling on. Drank from Darsonville glasses. What a terrific Champagne! Lightly leesy. Ginger biscuit. Just the right amount of dosage - not astringent at all, but slight fruit sweetness tempered by fresh acidity. Excellent balance. I wish I had a case of this to drink now and for the next 10 years.

At POST Family Resort, Unken, Austria. No formal notes. Apple, stone fruit, nuts, almond paste, bread crust, brioche, and smoky and stony mineral notes, with fresh acidity, and very good length. Medium-bodied, and smoothly textured, with fine mousse. The mousse softened further after the wine breathed for a few minutes. Good, but does not have the same tension and freshness as bottles I remember from ten years ago.

Plenty of toasty complexity but in this bottle a touch too much of oxidation and a sherry note. I brought it back from the brink by mixing it in a 2:1 dilution with a young 2018 Tasmanian sparkling that had an exuberance of acid/fruit but not a lot of complexity. somewhat unorthodox but it actually worked and we got through all 3 bottles on Christams lunch.
