Gonzalez Byass, Fino Dos Palmas Sherry

Ganando en complejidad respecto al Tío Pepe en rama este fino "viejo" muestra con excelente presencia las huellas de la crianza biológica, desde la manzana verde, pasando por la masa de pan, las notas anisadas, los toques de polvos de talco y sus almendras crudas. En boca la entrada es muy buen, pasa con finura pero también con raza, seco, afilado, sápido, con suaves amargos, sutil salinidad y notable longitud.

Overture of International Sherry Week 2025 was yesterday’s brilliant Tio Pepe ’Dos Palmas’ (15.5% ABV, Saca 2022, bottled 20/10/2022, unfiltered, non-clarified), fine-threaded excellence, true to terroir & the Fino sherry style. I recall it as somewhat more ruthless, this outing showed balance & finesse. Deep golden, amber in appearance. Nose w just a fine-tuned whiff of flor, sea salt, gym chalk, grilled lemon + zest, bitter almonds. Ravishing, m-bodied palate, zesty & salty, warming mineral-drive, balanced close!

White Bourgogne Grand Cru (Chez moi) : Pre tasting snacks and sherry. First time I have this. Very nice and rounded, big bodied with some glycerol. Good length.

Sample tasting at work (Oinoscent) : 500ml bottles, 15.50%, bottling 10/20/2022, 8 years ageing, selection of the normal Tio Pepe casks The wine shows depth, almond, VA notes, glue, dried citrus and apple notes, some honey notes, dried red fruit notes. Palate is fresh, light, citrus, lime, quince, mineral, tight, med finish, VA again

Pnp. Lemon, olive brine, toasted almonds, dried mushrooms, bruised apple. Pleasantly full and soft mouthfeel. Completely dry. Good acidity and length, some nice complexity. Perfect food-companion, in this case a Scandinavian take on tapas.

Tasted this at the Great Fortifieds - Sherry & Tawny Port Masterclass by Ch'ng Poh Tiong at Prowine Singapore 2024. Straw gold in colour with fleeting aromas. Dry with a sharp finish. Dried almonds were evident with a slightly salty, flinty midpalate. Ample acidity to match the alcohol. This wine should match very well with seafood with a rich creamy sauce. An eye opening and riveting wine.

Gold in a glass and incredibly smooth although perhaps a little muted. It isn't as fresh as the Una Palma but it doesn't feel like it has really developed too much after the extra years under the flor. Good fino but not great.

Sherry Tasting. ok yes, this carries the alcohol better, more olives savory depth. my favorite of the Uno/Dos/Tres "vertical"

Big flavors of yeast, raisin and nutty tones.

Delightful fino from Gonzalez Byass. Deep golden, dense in appearance. V intense nose, oxidation, expressive flor/yeast, basket of different nuts, Round full-bodied and v fresh yet saline palate, good creamy texture, outstanding saline-dry finish. Lively mouthfeel throughout bottle!

Introducing the Jewels of Gonzalez Byass (Zoom!) : 6 years old (so couple of years older than regular TP). Nutty, furniture polish, marine. Very yeasty, a little mushroom. Long and chewy.
