Vallet Freres Gevrey-Chambertin Clos de la Justice

Very mature indeed - light red with lots of orange/brown. Nose took about 30 minutes to evolve after the bottle was opened (but not decanted) - became a light sweet red cherry with a bit of earthiness. Very similar on the palate with the tannins almost gone, but some balancing acidity remaining. Went beautifully with very runny epoisse cheese - a perfect match!
