Pannier Champagne Brut Millésimé

Wow, what a difference 7 years makes. The fuller body it still there, but its muted by additional complexity and mature notes that round it out without smacking you upside the head. Still strong acidity with a someone tamed mousse. Very good spot right now, but this is my last one. This should gain additional complexity and should easily last until 2030 if you are a fan of older mature champagne.

Big, Big champagne. One of the biggest I've had. Huge nose of yeast, pear, apple, vanilla, and wax. Big thick mousse mouthfeel, some pear, apricot, vanilla, zesty yeastiness, zippy acidity, nice finish. Still pretty primary. Better after 1 hr open, maybe even decant. I am going to wait a couple more years until I open another one.
