Chablis Tasting Event (Bistro Moncur, Sydney) : A little butter, touch of stone fruit, quite dialled back from an intensity perspective, a little sweet spice, almost quince notes. Medium plus intensity acidity, initial fruit is subsumed by mouthcoating texture and a little bitterness on the finish. Meh.

Mid gold, some green. A definite Camembert hint on nose. Tons of broad lemon fruit. Iodine. Some chalky texture. Good body and length. Not a star but highly enjoyable. Definitely better now than previously.

Medium yellow with yet a little green. Nice oyster shell/sea breeze aromas. Medium weight, lovely texture imparted by just the right dose of wood. Lemony fruit, reasonable minerality, good acidity, excellent length. Not profound but well preserved and well balanced. This has shown well over the years.

Mid gold, some green. A definite Camembert hint on nose, or white truffles to someone else. Tons of broad lemon fruit. Some chalky texture. Good body and length. Not a star but highly enjoyable.

Greenish yellow. Right out of the bottle, iodine and algal tones-your basic Chablis tide pool. More ripe lemon emerged. Light to medium weight, excellent purity of fruit, acidity, and limestone with a low dose of wood. This grew in the glass. When I tasted it 5 years ago, I thought it was more at the Premier Cru than Grand Cru level, and so it still seems today. If you set aside the hierarchical expectations, though, this is a very nicely …

This is really coming round and opening out. Lots of steely acidity, lemon & grapefruit citrus. Plenty of limestone/chalk. Good length.

Decent but not in any way exceptional. Solid body, good acidity, not tired but lacking spirit.

Fresh pale golden green. Lots of lemon, bit of salt and iodine. Fairly solid. Good acidity, good length. I agree, not amazing for a Grand Cru but its at 1er cru prices. Enjoyable.

More 2007 Chablis, Including Fevre Les Clos (Vin Vino, Palo Alto) : Lower pitched than the Dauvissat and also lighter weight. A kiss of wood is present but very restrained. Terrific balance, subtle sweetness combined with powdery, lemon fruit. This is one that won me over with its detail, elegance, and focus. OK, maybe it falls just a tad short of Grand Cru stature, but I bought it anyway; when I drink it, I'll close my eyes and just imagine …
