Weingut Roman Hermann Completer

Completer is a rare, old swiss grape that you only find in the Herrschaft. It‘s notoriously high on acidity, that‘s why some winemakers like Donatsch make their version with some residual sugar and others recommend a long sleeping period before pulling the cork. I don‘t know how Roman does it, but it feels dry and not overly acidic. Blind, I‘d say Chardonnay for sure, and a rather good one.
